Beef Roast w/ Potatoes

So I have to give credit where credit is due.  This is actually my husbands accidental creation and it’s amazing 🙂

What You Will Need:
3 lb eye eye round or tenderloin
8 russet potatoes, cubed
3 Tbsp Olive Oil, Divided
4 Cloves of Garlic, Chopped
1 Packet of Good Seasons Italian Dressing Mix
2 Tsp Salt, Divided
2 Tsp Pepper, Divided
1 Tsp Paprika, Divided

Preheat your oven to 375.  To prepare the beef combine garlic, 1 tbsp olive oil, 1 tsp salt and pepper, and packet of good seasons.  Mix together and rub all over the beef.  For the potatoes lay them flat in a cast iron roasting pan or regular pan lined with foil and toss with 2 tbsp olive oil, 1 tsp of salt, pepper, and paprika.  I have this awesome roasting pan where I just line the potatoes on the bottom and have the beef on top so the juices from the beef drip down and also flavor the potatoes.  You can cook them separately though and pour some of the juice from the beef on the potatoes later on, either or 🙂

wp-1455647027470.jpegCook on 375 for 1 hour and 15 mins for medium-that is what worked for us but make sure you test yours with a thermometer to make sure it is cooked properly and to your own liking.  Remove and tent beef with some foil and let sit for 10 minutes.  Stir potatoes and put back in for another 10 minutes while beef sits.
